Spiess - "Fleischkäse"
Fleischkäse or Leberkäse (as it is referred to in Germany, Austria and Tyrol) is a meat speciality in Switzerland that is similar to bologna sausage. Fleischkäse could also be described as baked Swiss meat loaf. It consists of corned beef, pork and bacon and is made by grinding the ingredients very finely and then baking it as a loaf in a bread pan until it has a crunchy brown crust.
Fleischkäse is said to have been invented in 1776, although this story has been heavily contested. The name "Leberkäse" literally translates to "meat- or liver-cheese". Cold, cut into very thin slices and used on a variety of sandwiches, usually seasoned with pickled cucumbers. In Switzerland Fleischkäse is also eaten cold, cut into thin strips and served with mustard. Slices of Fleischkäse on top of a Rösti with a sunny-side-up fried egg is also a very traditional dish.
